Rosemary Walnut Cranberry and Feta Loaf


After a late night and early meeting I still managed to make 3 loaves of bread this morning! I'm super woman apparently.

Rosemary, walnut, feta and cranberry bread. Full credit to Mikko espresso & boutique who made it first (and does it best). Here's what I did in my attempt to match it:


• 3 cups flower

• 1/4 tsp. yeast (I used original yeast and instant, original was better)

• 1 tsp. salt

Sift together. Add:

• 1 1/2 cups of warm water

Proof overnight in the bowl by leaving it on the counter, covered with a cotton towel. In the morning, fold the following into the dough (fold and press with your wrist, repeat about 10 times):

• Feta cheese

• Fresh Rosemary

• Fresh cranberries

• Chopped walnuts

Note: I added what I thought was a lot but wish I’d put more!

Place the dough onto parchment paper and put back into the bowl, covered, to rise for an extra 30 minutes while the oven preheats to 450°F.

Put the dough into a dutch oven (with parchment paper) and oven proof lid.

Bake for 30 minutes then remove the lid to brown the top for 10-15 more minutes.
