Coffee and Almond ‘Nice’ Cream


My amazing friend Suzie, a constant inspiration of mine for a healthy diet and lifestyle, suggested that I try her nice cream recipe which included almond butter - it was a huge hit in my house! I freestyled the ratios rather than measuring but it turned out fantastic, such a good combo I think it would be difficult to mess up.

Coffee is one of my absolute favourite ice cream flavours so I added espresso powder to one of the batches, both turned out amazing and so refreshing for how hot it’s been outside, I can’t wait to make more!

If you have trouble saying no to regular ice cream I highly suggest this recipe - trust me you won’t be craving fattening ice cream with dairy and processed sugar after you try this.

The ultimate bonus, the prep time is a total of 5 minutes and it’s ready to eat.




2 bananas (frozen, in pieces)

1/4 cup almond milk

2 tbsp almond butter

1 tsp vanilla extract


2 bananas (frozen, in pieces)

1/4 cup almond milk

1 heaping tbsp espresso powder


Add all ingredients into the food processor and blend until smooth


Let sit in the freezer to firm up if needed. It will be very creamy, I’m yet to try but you can let the mixture churn in an ice cream maker after it’s processed to firm up, could be worth it.

I found the bananas add enough sweetness but Suzie’s recipe included vanilla almond milk rather than regular, I simply used what I had.
