Banana Chocolate Chip Muffins


Bananas are such a great ingredient to use in baking for a natural sweetener, great flavour and moist outcome. I didn't think it would be difficult to find a healthy banana muffin recipe and I found it on Ambitious Kitchen's blog, their 'Skinny Banana Chocolate muffins'.



1 1/2 cups whole wheat flour

1 tsp baking soda

1/4 tsp salt

3 bananas

1/4 cup honey

1 tbsp vanilla

1 tbsp coconut oil

1 egg

1/2 cup plain greek yogurt

1 tbsp unsweetened almond milk

1/2 cup chocolate chips (I used a 64% chocolate bar, chopped into small chunks)

Optional: The one thing I changed from the original recipe was the addition of oats. It dried the batter out from the batch I baked without, but it was a nice alternative.


Preheat oven to 350 degree F.

Mix together flour, baking soda and salt.

Add bananas, honey, vanilla, oil, egg, milk and yogurt to a blender. Blend on high from about 1 minutes, until the batter is smooth and creamy.

Add dry ingredients to wet until just combined.

Fold in the chocolate.

Divide batter into muffin tin (greased) and bake for 20-25 minutes or until tooth pick comes out clean.

Note: My muffin tin was very small and they baked perfectly by only 12 minutes. Be aware!
