Matcha Cheesecake Bars: GUILTY

I purposely look for healthier meal/dessert options to test and add to my blog but it is almost the weekend and if you work hard Monday-Friday, then why not. That is the point of this blog after all, quality household recipes with a healthy spin, and weekend treats to celebrate your hard work. This is my motto to staying healthy and happy.

I chose this recipe, found here, first and foremost because of it's colour. I'm a long time cheesecake fan and new fan of matcha powder. It wasn't cheap at my local health food store but you can do so much with it. Look up recipes to get creative, or use it for morning lattes.

Heaven.

RECIPE

 1 package of white chocolate chips

1 1/2 teaspoons of matcha powder

1 package of chocolate sandwich cookies

1/2 cups of heavy whipping cream

1 8oz package of cream cheese

3 tbsp of sugar

Garnish with Blackberries

DIRECTIONS

Line a 9x9inch pan with aluminum foil, leaving enough at the edges to later lift out the dessert.

Melt the white chocolate.

Finely grind cookies in a food processor, adding 2 tablespoons of melted white chocolate until it begins to clump together. Firmly press the cookie mixture onto the bottom of the pan. Set in the fridge or freezer.

Stir matcha powder into the remaining white chocolate.

Beat whipping cream in a medium bowl until soft peaks form.

Beat cream cheese in a separate bowl with sugar until smooth. Beat in the white chocolate/matcha mixture and fold in the whipped cream. Spread over the crust. Chill for at least 2 hours. Uhm, EASY.

Note: I had trouble getting the cookies to clump and ended up using the majority of the white chocolate. I suggest buying regular Oreos (with the icing) and simply processing that for the crust. Haven't tried, but I may next time.
