Lemon Poppy Seed Pancakes

 
 

This is the first instalment of three from my crazed guilt-free pancake morning. I was impatient to test the recipes and photograph all the delicious items I bought, but I'll separate into three posts for clarity. Also this may have been my favourite, and definitely the one I'll be revisiting soon. So it's appropriately my first blog post!

RECIPE

1 cup whole wheat flour

1/3 cup honey

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup almond milk

zest from 2 lemons

1/4 cup fresh lemon juice

1 tbsp coconut oil

1 egg

1 1/2 tsp vanilla extract

1/3 cup poppy seeds

DIRECTIONS

Whisk dry ingredients. In a separate bowl, blend wet ingredients. Combine wet ingredients with the dry and fold in poppy seeds. Top with: Blueberry compote (my version was fresh blueberries and 1/2 cup of sugarless jam, melted together on stovetop).
